Delicious news for chocolate lovers. Southborough’s cooking school is holding master classes to turn culinary professionals and serious enthusiasts into chocolatiers.
Culinary Underground School for Home Cooks is offering a five-day intensive, challenging curriculum that teaches the theory and practice of chocolate making, from bean to bar.
The Artisan Chocolate Master Course is designed for culinary professionals, culinary students, and entrepreneurs who work in the business or wish to start their own artisan or boutique chocolate business, as well as for the serious amateur.
In this advanced course, students learn the fundamentals of the science of chocolate. Central to the course is mastering the techniques of hand-tempering high-grade chocolate couverture.
Students will learn to produce a wide range of handcrafted artisan chocolate candies including ganache fillings, hand-dipped candies, molded bonbons, and truffles (and take home their creations!)
Learn from masters:
Liz Della Paolera, Pastry Chef Instructor, is a graduate of the Cordon Bleu Pastry Program and has taken professional development classes in chocolate and confectionary at Cambridge School of Culinary Arts and the International Culinary Center in New York.
Suzanne Johnson, Chef Instructor, is a graduate of Ecole Chocolate Professional Chocolatier Program and has taken professional chocolate classes at the Culinary Institute of America in Hyde Park, New York.
Their passion for all things chocolate is exceeded only by their love of teaching students to work with this complex and compelling ingredient!
Sign up soon since the course is limited to 8 students. The next session with openings is September 14-18. Classes will take place Mon. – Fri, 9:00 am – 3:00 pm.
